Ahh, ramen. What’s not to love? Easy, delicious, and cheap. This dish was born out of a burning desire for some trash, flavorful food, fast. In comes ramen. It’s quick, it’s comforting. I knew I wanted to create a simple dish with the ramen, and the next step was to decide what flavors the dish should impart.

Ingredients

  • Ramen noodles
  • Vegan beef
  • Mixed vegetables
  • Veggie broth
  • Minced garlic
  • Brown sugar
  • Worcestershire sauce
  • Soy sauce
  • Red pepper flakes
  • Seasonings
The key ingredient here is the sauce. I created a sauce using ingredients that I have on hand, and ingredients that I think most of us have at our disposal. I use veggie broth, brown sugar, minced garlic, brown sugar, soy sauce, worcestercire sauce, and a mix of some spices that I have on hand. I just use whatever I’m feeling at the time. The real star of this sauce are the red pepper flakes. These can also be substituted for some hot sauce. I would suggest Sriracha. Of course, if you are not a fan of spicy food, do not use it. To amp up the flavor, you can add some ginger, and increase the soy sauce and sugar.
Next, we have the bulk of our meal. This is the ramen, beef substitute and veggies. Any ramen will absolutely work, but I use the Lotus Foods ramen. It is made from rice rather than flour, and has slightly more nutrients. It’s a wonderful option if you’re looking to add more healthy grains into your diet, with all the deliciousness of traditional ramen noodles! For the beef, I use the Trader Joe’s Beef-less Ground Beef. This is the BEST budget friendly meat substitute out there. However, this recipe is super customizable and you can substitute the beef for tofu or even chickpeas. Just try to get some protein in there.

Making the Ramen

  • Mix all of your sauce ingredients in one bowl.
  • Boil your ramen until just cooked!
  • Heat a large, deep skillet or wok on medium high heat, and add your noodles and vegetables.
  • Add the beef or protein source of choice along with your sauce.

Spicy Ramen Stir-Fry

Ingredients
  

  • 2 blocks ramen noodles
  • 8 oz trader joe's vegan beef
  • 1/3 cup vegetable broth
  • 3 tbsp soy sauce
  • 2 tsp Worcestershire sauce
  • 2 tbsp minced garlic
  • 2 tsp brown sugar
  • 2-4 tsp red pepper flakes
  • 1 cup mixed frozen vegetables

Instructions
 

  • Boil ramen noodles according to package directions. Drain and Set aside
  • In a bowl, whisk together the broth, soy sauce, garlic, brown sugar, and red pepper flakes until well combined. This will be your sauce.
  • Heat your sauce pan or wok to medium high. Add the vegetables and cook for about five minutes
  • Add the beef, noodles, and sauce and cook for about 10 more minutes.
