
Well, hello. Allow me to show you the most delicious, un-vegan vegan dish I know. This recipe was born out of a desire to make something vegan that all of the hardcore meat-eating people in my life would truly enjoy. The advancement in vegan meat, particularly the ground beef substitute, has been absolutely magical and unbelievably quick these past few years. It seems that every just about every grocery store has its own version. For this recipe, I used the classic impossible meat. I also decided to create a twist on a classic meatball.
A Different Kind of Meatball
I’ve of course made a basic Italian meatball-also delicious using vegan meatless ground, but I wanted to come up with more creative ways to make meatballs. With this in mind, I looked in my fridge for sauces that would provide inspiration-in comes gochugang.
What’s in the Meatballs
- Vegan ground beef
- Chopped green onions
- Bread crumbs
- Ground flax seed
- Gochujang
- Worcestershire sauce
- Soy sauce
How to Make the Meatballs
- Place all of your ingredients into one bowl. Mix them all together with a wooden spoon or spatula. Easy as that!

- Roll into meatballs-whatever size works best for you. For me, this mixture makes about eight-ten meatballs

- Next, bake the meatballs in the oven for about fifteen minutes! While they are baking, you can prepare the delicious sweet soy glaze.

The Sweet Soy Glaze
What’s in the sweet soy glaze?
- Brown sugar
- Soy sauce
- Corn starch
- Veggie broth

How to Make Sweet Soy Glaze
- In a bowl, whisk together all of the ingredients. This will have the texture of a thick vegetable broth.

- Place the mixture in a pot and bring it to a slow boil.

- As soon as the mixture begins to boil, reduce the heat to low. You will see it thicken into that glaze consistency. If you want to thin it out, you can definitely add a bit more veggie broth until it reaches your desired texture.

How to Serve the Meatballs

Vegan Korean Meatballs with Sweet Soy Glaze
Ingredients
For the Meatballs
- 1 12 oz Pack of vegan ground beef substitute
- 1/3 cup bread crumbs
- 1 flax egg*
- 1 tsp Worcestershire sauce
- 1 tbsp soy sauce
- 2 tbsp gochujang
Sweet Soy Glaze
- 1/3 cup brown sugar
- 2-3 tbsp soy sauce
- 1 tbsp corn starch
- 1/2 cup veggie broth
Instructions
For the Meatballs
- Preheat the oven to 375 degrees.
- Combine all of the ingredients into a mixing bowl.
- Form into meatballs.
- Place the meatballs on a greased baking dish.
- Put the meatballs in the oven and bake for 15 minutes.
For the Sweet Soy Glaze
- In a bowl, combine all the ingredients. Whisk together.
- Place on a small saucepan or wok. Bring to a boil.
- As soon as it begins to boil, reduce to a simmer.
- Let the mixture come together until it has a thick, glaze like consistency(see photo)
